Last night, Caitlin at Healthy Tipping Point inspired me to make Banana Soft Serve. Mostly because it’s the easiest thing to do and takes no brain power, which we know I don’t have when it comes to the kitchen.
You can visit Caitlin’s blog and see the amazing breakfast she made incorporating the soft serve, or you can be lazy and read my horrible attempt at instructions:
- Place a few bananas in a food processor (I used the Magic Bullet) until they are a liquid consistency.
- Freeze the liquid bananas.
- Once frozen, place the bananas back in the food processor and process until they are a creamy ice-cream like consistency.
Then, do with those bananas what you will (keep it legal). I topped them with a few semi-sweet morsels.
The hubs and I tried the banana soft serve and we both agreed that it was good but eating a sliced frozen banana tastes more like ice cream to us, while the soft serve tasted more like a pudding/ice cream hybrid.
Also, the serving in the cup is one banana. I could easily eat 3 times that, so personally I would need to be careful unless I want to be eating 300-400 calories in bananas for dessert. I do think the one banana portion would be especially tasty as a waffle or pancake topping.
